Lemony Grilled Chicken for a Heart Healthy #SundaySupper

Gambar
Today's Sunday Supper is all about heart healthy dishes. Whether it's a way of life, a new choice, a "sometimes" choice, or you're just trying to maintain that New Year resolution, we have some wonderful options for you. The dish I've prepared is a Greek dish called Lemonatie Kota sta Karvouna aka Lemony Grilled Chicken using boneless, skinless chicken breasts, marinated and grilled then served with a delightful sauce of your choice. The recommendations are Summer Peach Salsa or Tzatziki. Peaches aren't in season right now and since I drooled over all of the ingredients in Tzatziki, well....that's what my taste buds forced me to use. Now let me confess a little something about my grilling skills. I'm learning. I know how to start the charcoal but I never really know how many coals to use. This chicken only grilled for about 10 minutes and I really felt guilty using all those coals. Is that typical? A starter full of coals for a 10 - 20 minute grill...

Horiatki Salata #SundaySupper

Horiatki Salata aka Greek Village Salad is simple, light and amazingly delicious. If this is how the villagers eat....I need to rethink things a bit. You know that saying "less is more"? Well it certainly applies here...in a big way! I found this recipe in It's All Greek To Me by Debbie Matenopoulos. Its one of many recipes in this book that I've attached a post-it to. For some reason, when combined with the ingredients in this salad, and once coated and marinated with lemon juice and extra virgin olive oil.....these two ingredients seem to take advantage of being in their element and shine like nobodies business. It says that this salad is an everyday traditional side dish but you know what? It holds it's own as a main dish. The only dish. Great for lunch...a light di...

I'm taking a trip this summer. A virtual trip to Greece with Debbie Matenopoulos and I'm inviting you all to come along.  I haven't been exposed to Greek food very much, which is the reason I totally jumped on the opportunity to review Debbie Matenopoulos's "It's All Greek To Me" cookbook. What better way to experience incredible foods from Greece than to make it in your own kitchen with the 'assistance' of someone who has Greek cooking in her blood.  And there's a bonus! Debbie has added her own touch to her families traditional recipes. Not only to make them even more healthy but to also make them easier to prepare.  You know what I have to say about that? Grab a refreshing drink, pull up a chair and let's hang out with Debbie while we enjoy a Greek summer.  Really...if you were going to hang out with Debbie Matenopoulos, what would you say to her? I'd have to ask her about her cookbook, and food of course. And that's exactly what...
